About the Role


We are seeking a highly skilled and experienced Bakery Production Manager to oversee the full production operations of our kitchen.
This role covers cakes, pastries, desserts, and ice cream production.
The ideal candidate is hands-on, creative, highly organised, and able to maintain consistency, quality, and efficiency in a fast-paced premium café environment.


Key Responsibilities


Oversee daily bakery, pastry, dessert, and ice cream production
Plan and manage production schedules to meet daily café demand and events
Develop and standardise recipes to ensure consistency in taste, texture, and presentation
Maintain high-quality control across all products leaving the kitchen
Manage inventory of baking ingredients, dairy, and dessert supplies
Reduce waste and ensure cost efficiency in production
Supervise bakers, pastry assistants, and kitchen staff
Train staff on techniques, plating, hygiene, and production standards
Ensure strict hygiene and food safety compliance (HACCP-level standards)
Innovate and introduce new seasonal desserts, cakes, and ice cream flavours
Work closely with management on menu development and pricing feasibility
Ensure timely production for walk-in customers, pre-orders, and events.


Requirements


Minimum 3 - 5 years experience in a bakery/pastry/dessert production role (managerial or senior level preferred)
Strong expertise in:

Cakes (custom, celebration, slices)
Pastries (croissants, doughnuts, etc.)
Desserts (cheesecakes, mousses, plated desserts)
Ice cream production (preferred or willingness to learn quickly)
Strong leadership and team management skills
Excellent understanding of portion control, costing, and food pricing
Ability to work under pressure and meet daily production deadlines
High attention to detail and consistency
Creativity in product development and presentation
Knowledge of hygiene and kitchen safety standards.
