Our client is a high-end safari lodge situated within a wildlife conservancy in Laikipia. They are seeking an experienced and professional Head of Service to take full charge of restaurant and bar operations, providing hands-on leadership to the Food & Beverage service team, reporting to the Lodge Manager/General Manager. The role is based within the conservancy on a live-in basis.
Key Responsibilities:
Take full charge of restaurant and bar service, delivering consistent high-end guest experiences across breakfast, lunch, dinner, bush-meals and sundowners
Lead, roster, train and manage the performance of the waitering and bar team, providing regular coaching and addressing issues promptly and fairly
Prepare and oversee the service of cocktails, wines, spirits and beers, including developing signature cocktails
Control bar and F&B stock, ordering and supplier coordination, monitoring wastage and costs
Uphold cleanliness, hygiene and presentation standards across all guest-service areas
Liaise between kitchen, service team and lodge management, and lead service for special events and private dinners
Qualifications and Competencies
Diploma in Food & Beverage Service, Hotel Management or Hospitality from a recognised institution; Bartending/Mixology or WSET certification an added advantage
Minimum 5 years' combined waitering and bartending/mixology experience, including at least 2 years at supervisory or management level
Proven service leadership within a safari lodge, luxury camp, remote hotel or similar high-end environment
Strong cocktail and mixology knowledge, with a solid working understanding of wines, spirits, beers and bar presentation
Ability to lead, train and motivate a small F&B team, staying calm and organised under pressure
Confident spoken English and clear communication with international, local and VIP guests Professional, honest and responsible, with good references and willingness to live and work within a wildlife conservancy
