Outlet Manager - Vista at One&Only Resorts

The Vista Outlet Manager is responsible for overseeing the full operation of the hotel's main cocktail, spirits bar and lounge, ensuring exceptional guest experiences while maintaining strong cost control and company standards. The role includes managing staff schedules, events, training, performance and responsibilities, as well as ensuring efficient day-to-day operations.
The position requires strong focus on guest satisfaction, service standards, sales growth and profitability. Key responsibilities include managing rosters, payroll, leave, training records, operational expenses, stock takes, requisitions, transfers, P&L reporting and beverage costs. The manager must maintain effective inventory and cost controls, minimize unnecessary expenses and ensure that beverage and food costs remain within targets.
The manager is also responsible for recruiting, training, supervising and developing colleagues, conducting briefings and appraisals, maintaining health, safety, hygiene and fire-safety standards, and ensuring consistent service and cocktail quality. This includes overseeing drink preparation, developing and demonstrating recipes, creating new cocktails and promoting upselling and increased guest spend.
The role further involves coordinating with purchasing, kitchen, suppliers and F&B management, handling guest enquiries and complaints, planning and executing events, managing reservations, promoting Vista as a key hotel focal point, and identifying opportunities to improve sales, profitability and overall business performance. Strong organisational, leadership, financial, problem-solving, planning and communication skills are essential.
