JOB PURPOSE
The Pastry Chef is responsible for the preparation, production, presentation and quality control of all pastries, desserts, breads and other baked products within the hotel or restaurant.
The role requires a creative, skilled and disciplined professional who can consistently produce high-quality pastry products while maintaining excellent standards of hygiene, presentation, taste and portion control.
KEY RESPONSIBILITIES
Pastry & Bakery Production
Prepare and produce a wide range of pastries, desserts, cakes, breads and baked products.
Prepare products such as cakes, cupcakes, cookies, croissants, doughnuts, pies, tarts, mousses, puddings and other desserts as required.
Follow approved recipes and standardized production procedures.
Ensure consistency in taste, texture, appearance and portion size.
Develop new pastry and dessert concepts where required.
Food Quality & Presentation
Maintain high standards of food quality and presentation.
Ensure all pastry products are fresh, attractive and properly presented.
Monitor the quality of ingredients before and during production.
Ensure appropriate storage and handling of finished products.
Minimize wastage and maintain proper portion control.
Menu Development
Assist the Executive Chef/Head Chef in developing and updating pastry and dessert menus.
Introduce innovative pastry products that can improve the hotel's offerings and guest experience.
Develop seasonal and special-event pastry items.
Provide ideas for pastries suitable for buffets, banquets, room service, restaurants and special occasions.
Hygiene & Food Safety
Maintain strict personal and kitchen hygiene at all times.
Follow food safety and sanitation procedures.
Ensure workstations, equipment and storage areas are clean and properly maintained.
Properly label, date and store ingredients and prepared products.
Prevent cross-contamination and food spoilage.
Comply with all hotel and regulatory food safety requirements.
Inventory & Cost Control
Monitor pastry ingredients and supplies.
Ensure ingredients are used efficiently and responsibly.
Reduce unnecessary wastage.
Report shortages, damaged ingredients or equipment issues promptly.
Assist with stock-taking and inventory control.
Maintain awareness of food costs and portion sizes.
Kitchen Operations
Organize daily pastry production according to expected occupancy, events, reservations and operational requirements.
Coordinate with the Executive Chef/Head Chef and other kitchen sections.
Ensure pastry orders and special requests are completed on time.
Maintain an organized and efficient pastry section.
Ensure all equipment is properly used and cared for.
Teamwork & Staff Development
Work effectively with other members of the kitchen and Food & Beverage team.
Assist in training junior pastry staff and kitchen assistants.
Provide guidance on proper pastry preparation and techniques.
Maintain professionalism and discipline within the pastry section.
Support other kitchen operations when required.
Events & Special Orders
Prepare pastries and desserts for conferences, weddings, banquets, birthdays, corporate events and other functions.
Handle special cake and dessert requests according to approved specifications.
Ensure event orders are prepared and delivered within agreed timelines.

QUALIFICATIONS & EXPERIENCE
Certificate, Diploma or professional qualification in Culinary Arts, Baking & Pastry Arts, Hospitality Management or a related field.
Relevant professional pastry/bakery training will be an advantage.
Minimum of 2 - 3 years' relevant experience as a Pastry Chef, Baker or in a similar role, preferably within a hotel, restaurant, bakery or hospitality environment.
Experience in hotel or high-volume food production will be an added advantage.
